Dessert Gallery to open commissary

In mid-February, Dessert Gallery Bakery & Café’s new 5,000-square-foot commissary is scheduled to open for business. The commissary is under construction at 8813 Knight Road.

“The new commissary will serve as Dessert Gallery’s bakery and distribution center for our locations at Upper Kirby, Post Oak and Sugar Land (scheduled to open in May), as well as for our new online store that will debut nationally in early 2007,” said Sara Brook, owner. “Not only will it ensure that product quality and consistency remain high from store to store, but also in our products shipped nationwide.”

Located near 610 South Loop East and Fannin, the commissary will employ approximately 20 people. “With 80-quart mixers, double-rack ovens, sheeters, cutters, dough presses and large new coolers and freezers, we will more than double our capacity,” Brook said. The commissary also will provide more space for product packaging and a loading dock for shipping, “We’ve been working in about 1,600 square feet – we’re more than tripling our space.” The company’s current bakery, located at the Dessert Gallery on Kirby, eventually will be converted to event space for private parties.

Though Dessert Gallery will use automation to speed up processes such as rolling cookie dough, Brook insists that the company will stick to its proven recipe for success by continuing to make its rich, all-American, delicious homemade cakes, cookies and brownies “from scratch and with premium ingredients, the old-fashioned way.” For information about Dessert Gallery Bakery & Café, visit www.dessertgallery.com
