I wish you could have seen the Dessert Gallery kitchen today – boy, was it HUMMING! We were up to the rafters with flourless desserts, Easter bunnies and 10 shades of pastel buttercream!! After nearly 29 years in business, I don’t remember the last time that Easter and Passover actually fell on the same weekend. Given that Passover is our BIGGEST CAKE day of the year, and Easter is right behind it, it has certainly made for a VERY busy week!
It’s ironic that over the years, nearly all of our Passover desserts have ended up on our regular everyday menu. Not because they met the dietary needs of people who couldn’t have flour, but because they TASTE great!!!
At some point this week, someone asked me why we refer to our Passover desserts as “flourless” rather than “gluten-free” since “gluten-free” is more common. It would certainly be easier for marketing purposes, but it would be misleading and could even be dangerous to someone who is seriously allergic to gluten.
If someone is merely gluten intolerant, it is probably fine for them to have our flourless desserts. If someone is seriously allergic to gluten, however, they should not be eating anything prepared in our kitchen or in anyone else’s kitchen for that matter unless they are certain that there is absolutely no trace of gluten on site! Given that our kitchen will always have plenty of flour on hand, we will never be able to claim any of our products to be “gluten-free,” but it is certainly appropriate and safe to call them “flourless.”
No matter what holiday you are celebrating in the next few days, we are honored to know that our desserts are a special part of your family’s traditions this weekend and throughout the year!
